When Diageo announced in March 2018 that they hired Nicole Austin, a name well known in the craft spirits world, as the General Manager and Distiller of Cascade Hollow Distilling Co. in Tullahoma, Tennessee the distilling world took notice. The distillery is best known as the George Dickel Distillery and is well known for making Tennessee Whisky. Then two months later Cascade Hollow Distilling announced it was releasing a new version of its flagship George Dickel Tennessee Whisky finished in Tabasco Barrels and industry insiders scratched their heads as to why Austin would release something that appeared so gimmicky. She was quick to pen a handwritten letter to let the world know that that product was well under way prior to her leadership.
Distiller Nicole Austin Makes Her Mark with 13 Year Old Bottled in Bond George Dickel Tennessee Whisky
Now, 14 months after taking on her new role Austin is debuting the first George Dickel product with her fingerprint on it. Cascade Hollow Distilling has announced the release of a limited edition 13 Year Old Bottled in Bond George Dickel Tennessee Whisky and in this world of often high priced Whisky releases this one is reasonable at $35.99.
Austin said, “We wanted George Dickel Bottled in Bond to be rooted in authenticity, quality and truth, reflective of the values we feel are most important when making Tennessee’s finest whisky. The aged whisky stocks we have access to here at Cascade Hollow are absolutely beautiful, and it’s important to me that we create whisky that’s sure to be a great value for the quality you’re getting.”
George Dickel Bottled in Bond has a mash bill of 84% corn, 8% rye and 8% malted barley. It is chill charcoal mellowed by filtering it through sugar-maple charcoal like the rest of the George Dickel Tennessee Whisky portfolio, which helps it get that the smooth mouthfeel for which the brand is best known.

The company says at 100-proof George Dickel Bottled in Bond offers a bold and assertive profile with a well-balanced finish highlighted by tastes of light honey, tropical fruit, warm spices, and a touch of leather.

The Whisky is available now in the Bottle Shop at Cascade Hollow Distilling Co. and will roll out to retailers nationwide later in the month.
George Dickel Answers the Question: What is Tennessee Whisky?
Tennessee whisky differs from Kentucky bourbon mostly in the extra steps taken after distilling. One of these steps is charcoal mellowing, a process in which whisky is slowly seeped through vats packed with charcoal. Most Tennessee whisky distillers make their charcoal from aged, hard sugar maple trees, and we still fire ours the old-fashioned way: in the open air.
